Rich Chocolate Pudding & Citrus Cream

In chocolate, custard, fruit on February 15, 2011 at 08:20

Week 50 | February 15, 2011

Happy Valentine’s Day. What does that even mean? The best excuse to play with chocolate.

I love custards and puddings – tapioca or rice pudding, eclairs with custard filling, I recently mentioned to a friend that pot de cremes might be one of my favorite sweets. I grew up eating a lighter variation of a steamed gingery custard my mom would make during the cold season. However I tend to like custards that are lightly flavored, fragrant or fruity.

Flourless Whiskey-Chocolate Cake & Sunflower Meringue

In cake, chocolate, nuts on January 25, 2011 at 19:57

Week 48 | January 24, 2011

Whiskey + milk chocolate. A surprisingly nice pairing. How about in the form of a flourless chocolate cake? I like that idea, with a crisp meringue top to cut through the richness of uninterrupted chocolate. But wait, there’s more. The other day I came across “suncups” in the chocolate aisle of Berkeley Bowl. Treenut-free Recess cups, how novel. And now presenting, Flourless Whiskey-Chocolate Cake & Sunflower Meringue.

Sable Breton & Ganache Mini Cake

Week 32 | 9.22.2010

I’ve been spending much too much time thinking about homemade graham crackers in the past few days. My dear friend, who can apparently read my mind & mood, invited me to come along to a fire-pit s’more eating event last night. A delicious, toasty & bright evening of meeting new friends and smelling of campfire (and making my pillow smell of campfire…). All this to say I’ve been inspired by meringue, chocolate and a sticky-sweet child’s dessert.

Oven Out-of-Service – a Trio of Macarons

In chocolate, cookie, nuts, Uncategorized on August 25, 2010 at 14:19

Week 28 | 8.25.2010
Oh oven, we were getting along so well. I made a batch of macarons for a dinner party, then another, and then another. We were having such a good time together that I decided to make a chocolate granola snack to round out our day-long companionship. But somewhere in between macaron batch #3 and rotating the granola at the halfway point, you gave up on me and turned cold…

Hot Chocolate Cakes & Caramelized Cinnamon Cream

In cake, chocolate on August 16, 2010 at 14:37

Week 27 | 8.16.2010

It’s been a cold summer, the coldest it’s been in 50 years?! I’ll have none of that, or perhaps I’ll simply soothe my disappointment with a lovely chocolate cake, piped with a fresh dollop of sweet, caramelized cinnamon cream. I’m already warmed and comforted.

Hazelnut, Chocolate & Espresso Biscotti

Week 25 | 8.2.2010

A few weeks ago I woke up to a muffin and coffee breakfast that my friend had generously brought over to me. Sweet I know! The muffin was wonderfully memorable, chock full of hazelnut bits, small chunks of dark chocolate, and a smattering of coffee grounds. It was fragrant, hearty and sensational with every bite.

Upside-down Plum Cake & Chocolate Crust

In breakfast, cake, chocolate, fruit on July 27, 2010 at 07:45

Week 24 | 7.26.2010

For the past week on the way to the kitchen I’ve been walking past a basket of small plums that my mother brought over from a neighbor’s garden. I’ve been steadily turning the small mountain into a hill but there are still enough left for a moist plum & buttermilk cake. With a small disk of cocoa pastry crust held on with a dab of homemade caramel, this is a worthy breakfast, afternoon bite, or after-dinner treat.

Coconut-Chili & Chocolate Cookies

In chocolate, cookie on July 21, 2010 at 06:28

Week 23 | 7.19.2010

I’m back! The past week has been a jumble of exciting travels, unglamorous delays, and nonstop eating and food-related activities. But Bakery Bites has returned and with cookies in store for this week’s treat to boot.

Per request from a frequent visitor I’ve dished up some ‘chocolate and spice’ in the form of coconut & chili butter cookies to be filled with whipped dark chocolate ganache. Chocolate & spice, with a bit of coconut tucked in between.

French Macarons II

In chocolate, cookie, fruit on June 23, 2010 at 07:44

Week 19 | 6.21.2010

About a month ago I dished out the latest American trend in French treats. Macarons. (Find a fun pronunciation guide here). They’re everywhere, but still not enough to go around! So here they are again.

Cherry, Chocolate & Hazelnut Napoleon

In chocolate, custard, fruit, nuts, pastry on June 15, 2010 at 08:49

Week 18 | 6.14.2010

I spent the past week waging war on the blistering heat with ice cream experiments. That leaves me LOTS OF EGG WHITES. Not quite ready to launch into another round of macarons, but a light meringue speckled with some chocolate cake crumbles and toasty hazelnuts might be just the thing. It seems condemnable to rely only on nuts and chocolate when the markets are overflowing with ripe fruit. I’ll find a way to sneak some cherries into the mix.

Tartlette pics from last week soon to come!
