Flourless Whiskey-Chocolate Cake & Sunflower Meringue

Whiskey + milk chocolate. A surprisingly nice pairing. How about in the form of a flourless chocolate cake? I like that idea, with a crisp meringue top to cut through the richness of uninterrupted chocolate. But wait, there’s more. The other day I came across “suncups” in the chocolate aisle of Berkeley Bowl. Treenut-free Recess cups, how novel. And now presenting, Flourless Whiskey-Chocolate Cake & Sunflower Meringue.

Upside-down Persimmon Sour Cream Cake

Week 40 | 12.1.2010

December 1st. Welcome back from a festive break! I’m re-energized to test out a “stack” of new recipes after a couple of weeks off.

I’ve been eating persimmons nonstop since they first popped-up in the market a few weeks back. I can’t seem to get enough of the pumpkin-apple, caramel-sweetness of this gorgeous fruit. The Fuyu kind mind you. Hachiya’s are delicious but almost too¬† *gasp*, too sweet for me. I also like the clean crunch of Fuyu’s A proper fall fruit.

Pumpkin Cheesecake

I have a great giant Cinderella pumpkin taking over one of my few wooden stools, remnants of Halloween festivities. I don’t have the heart to cut into it just yet, but it did get me in a mindframe of baked pumpkin possibilities – teacake, muffin, pie, cheesecake

Is sweetened pumpkin only an American tradition? Only last week a french baker said to me, “I don’t like my vegetables sweetened!” when I asked why he never ate the delightful mini pumpkin pies he turned out for the holidays. Well I have a certain fondness for pumpkin, spice, and brown sugar crusts!

Mango, White Chocolate & Pistachio Cake

Week 37 | 11.3.2010

I’m in a mood for pistachios. Last night my friend came over and we whipped up these delicious pistachio-caramel eclairs (only after a minor mishap with doubling the water for the choux batter). A few days before I tested out this pistachio biscotti ball recipe with a hint of lemon zest and now, staring into my freezer, I realize I have enough mango curd leftover to fashion something delicate but delicious to fit into my pistachio-themed week.

Monday

Clove genoise (sponge cake)

Tuesday

Pistachio-almond dacquoise, a nutty meringue base layer.

Wednesday

Assemble dacquoise, feuillete, genoise, and mango curd cream.

I’ve been spending much too much time thinking about homemade graham crackers in the past few days. My dear friend, who can apparently read my mind & mood, invited me to come along to a fire-pit s’more eating event last night. A delicious, toasty & bright evening of meeting new friends and smelling of campfire (and making my pillow smell of campfire…). All this to say I’ve been inspired by meringue, chocolate and a sticky-sweet child’s dessert.

It’s been a cold summer, the coldest it’s been in 50 years?! I’ll have none of that, or perhaps I’ll simply soothe my disappointment with a lovely chocolate cake, piped with a fresh dollop of sweet, caramelized cinnamon cream. I’m already warmed and comforted.

Upside-down Plum Cake & Chocolate Crust

For the past week on the way to the kitchen I’ve been walking past a basket of small plums that my mother brought over from a neighbor’s garden. I’ve been steadily turning the small mountain into a hill but there are still enough left for a moist plum & buttermilk cake. With a small disk of cocoa pastry crust held on with a dab of homemade caramel, this is a worthy breakfast, afternoon bite, or after-dinner treat.

Hazelnut & Carrot Cake

Week 21 | 7.5.2010

Wow, it’s already mid-week and the beginning of July!

Certain foods are dear to me because of how I was introduced to them. From my dad, who is perpetually curious, I first hazarded a sample of sashimi in Hawaii as a child, and over the years we have in turn taken tastes of exotic Asian snacks such as puffy basil seed or fermented rice wine dessert drinks. From my mom I have discovered that root beer floats are best made with scoops of strawberry and vanilla gelato, or that a piece of white toast with butter and sugar is a deceptively simple treat.

Plum & Cream Roulade

Small, sour plums are raining down from above. Thud, squish, thud… The garden is a sticky mess with plums peeking out, between the rosemary and behind the kale like Easter eggs on a hunt.
