Caramel Flan and Caramelized Banana Tarts

Week 46 | January 10, 2011
Yikes! I spy one ripe banana, but ripe bananas make for the best caramelized fruit. It’s still the perfect weather for comforting warm custard and caramel. Unfortunately that means it’s freezing outside.

I’m envisioning some sugary nuggets of banana nestled in a sweet tart dough and covered with a caramel flan. Sounds good no?

Strawberry & Vanilla Tart

Fresh fruit, I know how delicious it can be but this weekend I was reminded by just how sweet and perfectly satisfying a ripe fig or juicy peach is. Sad, no more figs or peaches, but there are little baskets of lipstick red strawberries in the market that I simply can’t ignore.

Looking forward to making a little tart of vanilla cream and these berries later in the week.

Mango Lime Curd Tartlettes

A slight detour in my baking schedule and a very ripe mango led me to a pleasant discovery the other day. Mango & lime curd!

Fruit curds are pretty straightforward – eggs, fruit puree, some acid for flavor and to cut the sweetness, and finished with butter for creaminess. Simple but oh man, so tasty. Not to subject you too soon to yet another round of macarons (my discovery batch of curd ultimately wound up here), it’s back to tarts. Stay tuned.

Croque Monsieur Tart

It’s picnic time! The weather is beautiful and warm again, never a better time to be outdoors enjoying the sun.

Savory tarts make the perfect picnic food, an exciting alternative to a ham and cheese sandwich. But simple ham and cheese can also be wonderful! The Croque monsieur, French for “Mister Crunch?” is a hot sandwich of melted swiss cheese and ham.  I’ll be dressing it up a tiny bit more with a flaky crust and an eggy custard to hold together the bits of ham and cheese.

Let’s picnic!


Gluten-free tart shell. It works? It works! Flaky, flavorful, buttery and tender. Gluten-free (baking) is the latest rage. A mix of half a dozen different flour alternatives – brown rice, quinoa, spelt, tapicoa, potato – mustard, eggs and herbs for flavor, and a good knob of trusty butter to keep it all together.

Cheese and ham speak for themselves.

Summer is truly rolling in (regardless of how the weather chooses to protest). Classes are finished, the garden is planted, and cherries have made their way to the market! All of these are reason enough to smile.

Caramelized Almond Tartlette

I’ve been enjoying my nearly routine switching-off between cake and tarts – there are so many treats to explore of each kind. However I think next week may be a return to the savory side, so get ready.

Meanwhile it’s another week for sweets. I love the combination of almonds and caramel, or caramelized almonds – praline, brittle, toasty in granola, in a recent ice cream I sampled… Almonds and caramel make a happy match. Fruit Galettes

It is an awkward in-between season for fresh fruit. Whichever fruit (screams) out to me the loudest when I visit the market will make it into these little rustic tarts. Most likely I won’t be able to decide, in which case a variety of galettes will be made : )

Has it already been a month? Focusing on making one item each week is wonderful. I look forward to Thursday mornings when I sample a freshly baked up treat of the week that you guys will enjoy later that day.

Silky custard pie. That sounds like a tasty mouthful. I mentioned a few weeks ago that tarts are one of my favorite desserts. I used to be a cake person – chocolate ganache cakes and vanilla sponge with cream and fresh fruits for my birthdays. But my sister’s birthday request was always the same fresh fruit and custard tart. She was onto something way before I was. So let’s turn this tangy traditional Southern pie into a tart. Orange Chocolate Ganache Tarts

I came across something nice, dark chocolate and orange, and decided I wanted some in one of my favorite dessert forms – a tart. My original idea was to fill a sweet pastry crust with chocolate ganache that was flavored with zest and some orange syrup from candying orange peel earlier on.
