I’ve been plotting out this recipe for awhile ever since my last lemon and chocolate pairing. The cake was delicious, but in the spirit of hot weather I’ll opt for a creamy tart.
Chevre is a fresh goat’s milk cheese similar to ricotta or cream cheese, with a goaty tang. As Californians, we have the fortune to house some of the most delicious chev in the country. I’ll be using one of my favorites from a local cheesemaker in Sonoma, Laura Chenel’s.
“Move over there!” Many blocks of cocoa sweet dough getting cozy with the cheddar in the cheese drawer.
Lemon cream lightened with butter.
Dough rolled, tarts lined. Into the freezer we go.
