Summer is truly rolling in (regardless of how the weather chooses to protest). Classes are finished, the garden is planted, and cherries have made their way to the market! All of these are reason enough to smile.
This week I’ll be revisiting another cherry and pistachio combination with some of this beautiful fresh fruit. A simple tart to tempt some rays of sun to make an appearance?
Super ripe but firm cherries! Halved and macerated in sugar overnight. Pistachios and almonds are being whirled to a powder with some sugar.
A base of puff pastry, a generous smear of nut paste, some cherries to top. The sweet smell of butter returns.
