Week 12 | 5.3.2010
I’ve been enjoying my nearly routine switching-off between cake and tarts – there are so many treats to explore of each kind. However I think next week may be a return to the savory side, so get ready.
Meanwhile it’s another week for sweets. I love the combination of almonds and caramel, or caramelized almonds – praline, brittle, toasty in granola, in a recent ice cream I sampled… Almonds and caramel make a happy match. And for me, nothing makes a better base for such a happy match than a tart : )
We start, as always, with the dough. Mix, chill, roll, chill.
There was a rowdy bubbling of hot cream, sugar & almonds in my kitchen this morning. How I like to start my day.
